I'd like the idea of that being an option rather than automatic. If you need/want to kill them quickly you can press the left mouse while you've got the knife in hand and the enemy in the hold, it does a straight slash and you can let go or drag as you want - the enemy is dead either way. Oh, and rolling (movement + crouch/shift) is often a good way of evading an AI's attack. The AI seems to follow the same rules on attacks so I find this is significantly safer if the opponent is running at you - if they're standing or only circling they'll often do a straight kick and rolling won't...
