To change character you can press number keys 1 to 7. Some models like custom ones are only accessible through item browser in editor mode once you have installed them in SUM launcher's community content browser.

I mean the enemys such as a guard

What do you mean by change skin actually?
Do you want to change it into another model, like rabbit into wolf or something like that?
Or do you want to change it's color?
The easiest way to change any characters into one that are accessible through number keys is to make him a playable character and press the right number key. Once it's done all the waypoints and attachments should be the same as before and nothing get's lost once the level is reset with l key.
The key to change characters into players and to enemies back is ctrl shift p. Make sure that you only have 1 green spawn box at the same time.
