Yes, you can stalk wolves, if you come from the right direction, i.e. against the wind, and then jump right behind them with enough speed.
With this technique I finished level 14 Insane in 37 seconds, and I don't think it's optimal at all. But once you get the hang of it it's a lot easier and cheaper that what you did (finishing in less than 50 secs without spinecrushing).

wind? what wind? and how would you know what direction it's blowing?

I was wondering myself. I know snow falls, but I thought it falls straight down. :?

The fact that there is wind and that it is relevant in order to stalk wolves has been stated by David a couple times in interviews, such as this one.

What I can actually attest to is that in order to stalk wolfies you'd better not jump from certain directions, depending on the level. But since I've come to know these privileged directions by heart, I've never bothered to check if they can be deduced by looking at trees, snow, or such. I assume they can.

For example in level 12 you cannot stalk the wolf below you by jumping straight in the direction you're facing at the beginning of the level. But you can get him from left or right. In level 14 you have to jump from the right of the forest towards the inside (again, relative to your starting position).
