Wow, you're asking for a lot, I'm sure plenty of this stuff will be updated to come quite close to this. I'm not quite sure weapons will get as in depth as you explained, but they will be cultural and the developers have already developed quite a bit of lore to go along with each different race and they're still working on it, too. I think maybe birds might be a tall order.
Wall attacks, or attacks jumping off a wall were implemented in Lugaru, so I'm sure they'll be here as well and much much more. I just hope you don't want the game to conform to your every standard because it is probably going to be quite difficult to do so, but don't worry, the developers are great and they listen to the community's suggestions.

Maybe the possibility to catch the knife in the air or dodge the throwing knives, flip dodge (like lugaru) and counter attack

You disarm them by taking off their arms.

one thing i have thought of the two years i have had on overgrowth, is that when they make a campaign, i hope they make a different one for each character, like turner for rabbits, but like little side campaigns for like the rats stealth and the dogs fighting in the arena and stuff like that.
