The proper term for the weapon is Nunchaku. (Hey, it rhymes with Lugaru)

They're actually quite fun to go to...you get to run away from scary people in costumes who have no idea what the real world is...and avoid the elevators...because people like touching other people...and...and...yeah those places are scary little dump holes.
Anyway...another idea...night audit rabbits...because I want to feel better for taking this job where I have to work nights at a hotel and beat numbers into a computer with the powerful force of my fingers on the keyboard of all I Blame Microsoft computers and I really am getting off-topic so...
Probably been suggested...but what about garotting wire?

To be honest, I don't think chopping of a head would be as easy as just throwing a sharp little shuriken/circular saw thingies, even if it was one feet :\
But still; ouch.
Garotting wire?

Garotting wire is chokey-wire basically. They probably won't have an actual wire in that time period, so they could probably use some stick or cord of rope?

If they can have metal weapons, they can have wire.

This kind of metal can't just be hammered down to create a wire, it's brittle, it doesn't bend, it's a whole lot different from fiber wire or anything like that. You can't expect them to have metal wiring, because the material is completely different from what they use for weapons like swords.
While metal swords have been around before Jesus, the first metal garrotes have only been around since the 1810's.
So Sage is right, it would be too hard to make a real metal wire, but anything like a rope, scarf, belt, whatever, will do just fine.

And let's not forget that you can also just grab someone and strangle them with your bare hands.

I think that using a sword would be simpler, quicker, and easier.
