Games every gamer should be required to play at some point
Let's make a list of these. I wanna see what you guys come up with. I'll start with a few. Feel free to tell others if they don't think that a game should be part of this massive list.
Neverwinter Nights
Doom
Doukutsu Monogatari
Pong
Tetris
Metal Slug
Street Fighter
Final Fantasy
the Pokemon Gameboy adventure-type games (sorry, they're classics and everyone I know that's played em liked em, regardless of age)
Feel free to tell others if they don't think that a game should be part of this hoping-to-be-massive list.

Street Fighter Alpha 3. Marvel vs Capcom 2. Soul Calibur II.
Chrono Trigger. Super Mario RPG: Legend of the Seven Stars. Earthbound.
Twilight Princess. Link's Awakening. Ocarina of Time.
Super Metroid. Doukutsu Monogatari (already mentioned, I know).
That should cover the important genres.
EDITS: Fixed Marvel vs Capcom 2 and added Earthbound to the RPG list (how could I forget that?) due to wormguy's post.

Did someone say StarCraft? *drools on starcraft battle chest*
For the FPS oriented gamer, I recommend
Tremulous
Urban Terror (If you like CS-style games)
Halo (If you don't get major lag… For some reason, I can't start my own server, even with port forwarding…)
Garry's Mod (I can't play it 'cause I use a mac, but just having a look at it's screenshots 'n' stuff makes me drool…)
Cube & Sauerbraten (Especially if you lag heaps. It uses client-side collision detection… The fact that almost everything is client-side also lets you hack using just a memory editor however.)
A bunch of others:
StarCraft (Better if you're good at RTSes)
Battle for Wesnoth (If you prefer turn-based, this is a great choice)
N-Ball
Lightning's Shadow
And last but holy bajeezus not least, Lugaru.
