In the first posted demo, is the blade landing exactly balanced on its edge? Because it's handled very nicely, and congrats if so.

In general, it's a bad idea to ask when a game will be done, because there are too many unknowns, especially at this point in development.

Bump mapping is a texture with lighting and shadows that looks like theres bumps on it, while tricks the naked eye to think that it has more geometry. Normal mapping is taking data from a high polygon character model and turning it into a high res texture of some sort, I could be wrong though. Bump...
