Although the wiki is a little outdated, most of the controls are still the same.

Currently, the only way you could "disarm" an enemy without knocking him out is to choke hold him before he notices you. It makes him drop his weapon and if you're quick enough, you can stop choking him and roll over the weapon while holding Q to pick it up.

I find it irritating as well, especially when the ai seem to have less of a problem. (you can test it by having an enemy follow you up a steep-ish hill)
