I haven't actually seen that many. The only one whose name I can remember is Crouching Tiger, Hidden Dragon, but I could probably find something better if I got a chance to watch more of them. I've heard Ip Man was good, and the comedic ones are supposed to be good too (Shaolin Soccer, Kung Fu Hustle, Shanghai Noon, Drunken Master and so on).

Yeah Shaolin Soccer and Drunken Master are really good (those are the ones i've seen at least), but I have yet to see CT,HD. Enter the Dragon is, of course, very good, and most of Jackie Chan's movies are as well.

kung fu hustle was awesome, I used to really like who am I, but I still really like the first ong bak and the protector.

My martial arts movie experiences pretty much only spans Bruce Lee's films, some of Jet Li's stuff, and The Karate Kid
That said, I liked all of those.
EDIT: After doing some quick looking on IMDB, I'm pretty sure the two Jet Li films I saw were Hero and Fearless.

My favorite is The Matrix Series, but I really think it is more of a "Gun Fu" movie than a Kung Fu movie.

My favorite martial arts movie of all time has to be Hero from 2002, casting Jet Li.
I can't even describe why, but this movie still brings a soon-to-be 20 year old guy like me to tears of joy, every time.
I watched Ip Man yesterday, and it sure came close to being as touching to me as Hero.

I'd have to say Once Upon a Time in China 1,2, and 3. They're excellent movies that may seem a bit dated now, but I really enjoyed them.

Never Back Down 1 & 2 are my favourite fighting movies. MMA fighting is just a craze and movie is filmed very good. Check out there training scenes on my blog top 20 lists
