how the hec do you make a rabbit unconsious?

Just don't do enough damage to kill it. After a certain amount of damage, rabbits 'n' wolves will fall unconscious; this may appear like death, but the body shouldn't bleed. When the corpse is dripping blood, you know you've killed your opponent. Generally, it's pretty difficult to knock a rabbit unconscious without killing it if you're using a bladed weapon, so stick to bludgeoning attacks if you wanna try that. If you ever get a "Touch of Death!" bonus, that means you did enough damage to kill your opponent without knocking him/her unconscious first, I believe (it's been a while since I played, so there may be other restrictions i've forgotten). For the most part, if you beat an opponent with relatively weak attacks like a punch or sweep, you probably knocked him/her unconscious.

To see for sure: On the minimap, unconscious enemies will be grey, and dead ones will be black, or darker grey.
It's easier to see if you've got two kinds close to each other.

On the right and bottom corner. It will not show if you play in "Insane" difficulty.

You probably are making him unconscious,

you just don't realize it.

If you can't notice from the minimap if he's unconscious or not, wait around.
It could take a while, but if he's not actually dead, he'll stand up again at a certain point. (right?)

Unconscious enemies will never get up, unless maybe you wait something like three years…

but bunny with stick if there are 3 enemys and i kill 2 and make i unconsious will i still win the game?

This isn't Splinter Cell or something like that, it won't make a difference whatsoever whether or not you kill an enemy or just make them unconscious. Besides Take No Prisoners and Merciful challenge bonuses.
