"And you know what they say" implies what you're about to say next is something you heard from someone: i.e: A rumour
The rumour you say next is indeed saying that rumours are inaccurate.

And hey, just because they say it doesn't make it a rumour. It's commonly accepted that rumours are full of inaccuracies.
Think of it as a theory rather than a rumour. Kind of like how black holes are theories rather than rumours.
Yes, I did in fact just compare rumours to black holes.
