They could probably make it so the drop kick has more knockback or you can't roll out of ragdoll for a second after, farther increasing the whole risk-reward system of using it in the first place.

I'm sure there will be counters to it. In Lugaru,the leg cannon was powerful but it was risky. If you missed it would either be countered or you would land flat on your back.
As for the jumping strat: I recall fighting wolves who were really aggressive in Lugaru. I was unable to jump around like in this video because they had some clever AI going on. The first time you tried jumping over their heads, they would be confused and you could land a few blows. But if you kept doing it, they would catch on to your shenanigans and start running towards you when you jumped so they could grab your legs and pull you down, stunning you (needless to say it's pretty painful to be pulled down from 5 feet off the ground).
